Thanks to the marvels of telecommuting, a great many people, especially in the US, now work from home. One of the nicest things about working from home is that it gives one the opportunity to cook. Not elaborate dishes that take lots of time, but simple things, for example stews that can be gotten together quickly, set to simmering, and checked every now and again (a step that gives one the opportunity to leave one's desk for a few minutes every hour, something it is important to do). Some ideas?
  • Sugo alla Bolognese naturally comes to mind. Simmer ossibuchi or braciole in the sauce, and you'll have both pasta sauce and a second course (in an Italian meal) or a second meal taken care of too.
  • Peposo is very nice if it's cold, especially if you like zesty stews that pack a punch. In short, an alternative to chili.
  • Brasato al Barolo is one of the great Italian dishes, and one of the nicest things about it is that it will work well with other good red wines too. So you can use a good, dry tannic local red, and drink the Barolo with it!
  • Fricandó alla Piemontese: The word Fricandó means different things in different parts of Italy. In Piemonte it's amixed meat stew made with the trimmings the butcher accumulates, with onions, potatoes and more. In short, a frugal, tasty stew.
To Go With These Dishes (including Sugo alla Bolognese, if you like)?
Polenta
! And, as a green, Spinaci Rifatti.
